Homemade Vegan Pesto!

I am going to share a new recipe that I tried tonight for dinner! I followed today's Breadcrumbs which led me on a journey as I stumbled upon a vegan pesto recipe. As soon as I saw the recipe...I knew that I had to make it for dinner tonight!

I never made homemade pesto before so I was very eager to get my hands working the culinary tools!
I'm following plant-based guidelines for OP HEALTHBOD - avoiding the consumption of oils and I am leaning more toward consuming starches as the main component of my dishes. I do have Dr. McDougall's book on order so I'll be writing about this more and more!

This is the first time that I used my new food processor which was gifted to me by my dad's fiancé!
The recipe stated that I could substitute olive oil with vegetable broth so this was a complete win-win situation! I even needed to purchase nutritional yeast for my cupboard anyway so when I saw the recipe incorporating nutritional yeast...another win-win!

The pesto came out scrumptious! Lemony - Garlicy - BASILY. What a real treat it was to eat this!
I sautéed spinach in vegetable broth and through some cooked peas in the mix as the pasta boiled.

Everything about this dish was excellent! My love devoured the dish as well. I'm not pressuring him to change his food choices and he welcomes my plant-based dishes. He had a second helping so I knew this dish was a hit!
I purchased more basil than I needed so I'm just going to whip this dish up again to take with me to his family on Mother's Day. I do not expect anyone to go out of their way to abide by my food guidelines so I have no issues with bringing a scrumptious dish for me to eat and for others to try!
I have fallen back in love with cooking! I enjoyed cooking while eating an omnivore diet, but now I have to be more creative with my cooking. My Sun in Cancer is BEAMING.
